The fermentation temperature is controlled between 0-4°C, and the pores are made more finite and even across the dough. After baking, the crust is delicate and soft, and the wheat flavor is fully stimulated. No additional oil is required to present a natural golden color. Coupled with strict dough control, the temperature and fermentation status of the dough are monitored 24/7, and all crusts are made to order. This makes for a soft, chewy quality pizza.
